I’m Liz Bukac, a nutrition consultant and diet coach.
Bodies are to be respected and nurtured, while still leaving space for dinner out with a friend or a cupcake eaten with the kids. All of it is part of health.
“What’s the healthiest thing you have?”
The spark came while working in bakeries and restaurants, when customers would ask, “What’s the healthiest thing you have?” Which made me think, was a grilled chicken salad any better than ribs and coleslaw? Why did we label one ‘good’ and one ‘bad’?
I wanted to understand the “why” behind those food questions, and the deeper I looked, the more I realized how much we don’t know. Nutrition, for all its science, still holds big mysteries about something as basic as eating and being well. Why can two people eat the same way and have completely different outcomes? Genetics, environment, gut bacteria, food quality, energy use all play a role, but the full picture is still forming. That puzzle is what keeps me fascinated by this work.

EDUCATION Background
I hold a Master of Science in Nutrition from Hunter College, where my studies focused on the gut microbiome and its connection to overall health across body systems. I also explored the growing issue of food affordability, a topic that’s only become more relevant as food prices continue to rise.
My clinical training took place within the NewYork-Presbyterian Hospital network, where I gained hands-on experience in gastroenterology, critical care, behavioral health, pediatrics, and endocrinology.
Clinical Experience
After earning my license, I joined NewYork-Presbyterian Hospital, where I spent five years covering both inpatient units and the outpatient cancer and infusion center. During this time, I became a Certified Diabetes Care and Education Specialist (CDCES) and expanded my practice to include bariatric surgery patients, providing education and guidance on post-operative nutrition and feeding plans.
